Beaumont, W.  Experiments and observations on the gastric juice and the physiology of digestion (1833).

William Beaumont (1785-1853) was the first to study human digestion and the movements of the stomach in vivo.  His subject was Alexis St. Martin, a Canadian half-breed who sustained a gastric fistula.
